IMHO The first text we should honour in this way is the first article of the Universal Declaration of Human Rights. I quote from Ma la Mha in Ün Guiza Compläts àl Glheƿ Talossan:
Toct i esteirs ƿumaes sint // All human beings are nascats liverats es equais // born free and equal in la zignità es els drepts. // in dignity and rights. Os sint amac'htats avetz // They are endowed with el säpençéu es la cunschençù // reason and conscience es fossent actarh // and should act l'iens à l'altreu // toward one another in ün atitüd da viensqab. // in a spirit of brotherhood.

Possibly - even though it is in Old Talossan - the first line of The Lord's prayer:
Ar Phatreu, qi isch à çéu, sanctificaðuâ estadra Tù nhômina
This might make a good chant-like phrase - a repeated cannon, a fugue? Have a listen to Lux Aurumque (Eric Whitaker) which is, also, a model you could use. Eight-part harmony?
What do you mean, in this context, by "choral"? I have conducted several choirs (and written choral music myself), and it seems that the only thing in common with instances of the word "choral" is "uses the (possibly) human voice".

The text will dictate style, etc. I am so much cooler than Eric Whitacre. ;-) Given the population bias within Talossa, maybe it should be A-T-Bar-B ... then we could get the singers together ... though, to be fair, we do also have S. For various bizarre reasons, my natural voice is (well, used to be - it's gradually disappearing. Bl**dy old age!) low Tenor, but I sang Alto in a male voice quartet (that had five members - yes, I know, I know...) and after some years of conducting a ladies choir I can sing (at a bit of a pinch) second soprano. Hmmm (thinks...) shall I insist upon your writing a fugue?
