Out of curiosity, why are the stars six-pointed? Are they meant to be Stars of David?

Out of curiosity, why are the stars six-pointed? Are they meant to be Stars of David? The term mullet refers to a star with straight sides, typically having five or six points, but may have any number of points specified in the blazon. If the number of points is not specified, five points are presumed in Gallo-British heraldry, and six points are presumed in German-Nordic heraldry. They do not necessarily represent the Star of David - this is just the preliminary representation of the Coat of Arms.

The design is wonderful! I agree with the proposed changes, raising the chevron, and reducing and scattering the number of stars. Perhaps with the chevron raised, the sun could be left on its side by itself, and and handful of stars could be scattered on the other side. This, coupled with an older style of compass, would leave the design absolutely perfect!

The only issue with your latest suggestion is that the undivided field above the chevron (i.e., the red) cannot be blazoned as having a charge (the sun) on one side and a semy of charges (a bunch of scattered stars) on the other. You would need to divide that field, meaning you would need choose a different background colour for one side or the other (that is, different from red and black).
This would cause the shield to be divided "per pall inverted" (i.e., as an upside-down Y) rather than as "per chevron", though, which may (or may not?) be a change you do not wish to make.
Thoughts?
And as for the mullets, yes, mullets are six-pointed by default; if you would rather have them be five-pointed, that is doable; just let the College know, and the words in your blazon will be mullety of five rather than simply mullety.

His Majesty has indicated that these arms would meet with his approval, should the petitioner indicate this as his final design choice.
