Anything but casu marzu. Okay, it's Sardinian, which is Talossa-cool. But any cheese that requires eye protection to eat it is just going too far, in my opinion.

I like Gouda.... Gouda is cheese. My mom gets this cheese with lines of beer in it. Rather Talossany.

Anyone ever heard of Syrian Cheese, it's like the best cheese ever (besides parmesean)
I think you guys should do something like Monterey Jack cause it's like south-western and stuff.

For the same southwestern touch, I was also thinking of asadero, a Mexican cheese which tastes to me like something in between Monterey Jack and mozarella.

It's like tied in a knot, and it's very stringy. It can also be called Armenian cheese or String cheese. Also it has nigella seeds in it.

What about Mascarpone? It has so many good points! Its like cream, (to which I am thoroughly addicted), only it has a hint of cheesy awsomeness and can be eaten in all kinds of savoury and sweet dishes, (or by itself with a spoon at 3 in the morning when your too sozzled to create anything complicated to burn the alcohol off with). Plus it starts with an M, so it has that near poetic alliterative quality (eg Mmmmm, Maricopan Mascarpone!)

I've never heard of Mascarpone, much less tasted it. I'll have to see if I can find it around here. I do like the alliteration, though!
